Popeye's Pies

The delicacy de jour from the Kitty Kat Kitchen tonight is Spinach Pie. Made with flaky fila dough, lemon juice, spinach, secret herbs and spices, and feta cheese. They are folded like the ceremonial folding of the American flag, with overlapping triangles. They are then cooked in the oven until they smell so good you have to bite into one immediately and burn your tongue. At least that's what I did. It was worth it. At the end of the batch of filling when there was no more spinach left, she folded in some raisins into cheese and made sweeter triangles suitable for dessert. These will be great with a little vanilla ice cream melted over them. She had to work fast before the fila dough sheets stuck to one another. It was like watching a teenager text message on a cell phone. All in a day's labor of love for Kitty the Cook.
